Dough:
1/2 cup lukewarm water (105°F to 110° F)
1 1/2 teaspoons dry active yeast
1 1/2 cups all purpose flour
1 1/4 teaspoons salt
1 teaspoon olive oil
Caramelized Onions:
4 ounces (1 stick) unsalted butter
3 yellow onions, thinly sliced lengthwise
Pinch of salt
2 teaspoons sugar
Toppings:
2/3 cup crème fraîche (sour cream if you can’t get)
1/4 cup fromage blanc or plain Greek yogurt
4 slices thick cut bacon
Fleur de sel and freshly ground white pepper
1 1/2 tablespoons fresh thyme leaves
